Beef Council of Wisconsin: Easy beef recipes perfect for autumn

In this article, we will be sharing two delicious recipes: French Onion Meatball Subs and Taco-Stuffed Eggrolls.

French Onion Meatball Subs

For the meatballs, you'll need 1 pound (either 80% lean or leaner) of ground beef, 1 small onion, chopped, 1 egg, 1 packet of onion soup mix, 1/4 cup dry bread crumbs, 1/4 teaspoon ground black pepper, 2 tablespoons canola oil, and 1 green onion.

To start, shape the ground beef into twelve 2-inch meatballs. In a bowl, combine the beef, chopped onion, egg, onion soup mix, bread crumbs, and pepper. Form into meatballs and set aside.

Heat the oil in a nonstick skillet over medium heat. Cook the meatballs for 5 minutes or until they begin to brown. Once browned, set them aside.

In the same skillet, add the gravy mix and 1/4 cup water. Whisk until thickened. Return the meatballs to the skillet and cook for 8 to 10 minutes or until heated through and reach an internal temperature of 160°F.

While the meatballs are cooking, prepare the caramelized onions separately. In a pan, sauté 1-1/2 cups thinly sliced onion in 2 tablespoons butter for 8 to 10 minutes or until they are caramelized.

For the subs, slice open 4 sub rolls, place 2 slices of Gruyere cheese on the bottom half of each roll, top with the meatballs, caramelized onions, and another slice of cheese. Place the top half of the roll on each sub and serve warm.

Taco-Stuffed Eggrolls

For the eggrolls, you'll need 10 eggroll wrappers, 1 pound (93% lean or leaner) of ground beef, 3 tablespoons taco seasoning mix, 1/2 cup salsa, 1 cup shredded Oaxaca cheese, and 1/2 cup water.

In a bowl, combine the ground beef, taco seasoning mix, salsa, and water. Mix well.

Place the eggroll wrappers on a clean, dry surface. Spoon the beef mixture onto each wrapper, followed by a sprinkle of shredded Oaxaca cheese. Fold the wrapper over the filling, tucking in the sides, and roll tightly to form an eggroll.

Preheat your air fryer to 385°F. Once heated, cook the eggrolls for 8 to 10 minutes or until golden brown and crispy.

Serve the Taco-Stuffed Eggrolls warm with your favourite dipping sauce.

Please note that cooking times are for fresh or thoroughly thawed ground beef and that ground beef should be cooked to an internal temperature of 160°F. Color is not a reliable indicator of ground beef doneness.
