Carbone, New York Classic, Opens in Dubai's Atlantis the Royal

Dubai's culinary scene continues to flourish with the recent opening of Carbone, a New York classic, at Atlantis the Royal. The restaurant, known for its signature dishes and extensive wine list, has already drawn attention with a star-studded opening weekend.

Carbone Dubai offers a selection of 450 wines, including Dubai exclusives, and showcases signature dishes like spicy vodka rigatoni and veal parmesan. The interiors, designed by long-time collaborator Ken Fulk, blend the signature elements of the Carbone brand with local extravagance, featuring chandeliers, leather banquettes, Venetian glass mirrors, and a museum-worthy art collection. The space includes a large jellyfish tank, cozy booths, and a private dining room for 40.

The opening weekend saw a surprise DJ set by supermodel Naomi Campbell, adding to the glamour. Despite founders' statements about not pursuing stars, Carbone is expected to be one of Dubai's most sought-after reservations, further cementing Dubai's status as a culinary capital, following the launch of its own Michelin guide in 2022.
