To begin, gather your ingredients: ½ cup unsalted butter, ¼ cup granulated sugar, 2 tsp. vanilla extract, 1 cup all-purpose flour, ½ - 1 Tbsp. culinary-grade matcha powder, ½ tsp. salt, ¼ cup milk chocolate or dark chocolate chips, 1 tsp. coconut oil, and, optionally, crushed macadamia nuts.

First, preheat your oven to 180°C (350°F) and line two baking sheets with parchment paper or silicone mats. In a large mixing bowl, cream together the butter and sugar until smooth. Add the vanilla extract and mix well.

Next, sift the matcha powder into the mixture and fold it in until thoroughly combined. Add the flour and salt, mixing until a dough forms.

Using a small cookie scoop, gather about 1.5 Tbsp. of matcha dough and roll into a ball. On a prepared baking sheet, place the dough balls and use a bamboo skewer or toothpick to add indents to create turtle shells.

Bake the turtle cookies for about 10-12 minutes or until edges are set and the matcha dough is slightly golden brown. Allow the cookies to cool on the tray for 5 minutes and then transfer to a cooling rack to fully cool.

While the matcha turtle shells are cooling, melt chocolate chips and coconut oil in a small microwave-safe bowl. Transfer the melted chocolate to a piping bag and decorate the tops of the shells with designs, if desired. You can also add crushed macadamia nuts on top of the chocolate for more texture.

For the turtle's head, legs, and tail, use the plain dough. Shape the pieces and attach them to the turtle shell once it has cooled completely.

The total time for this delightful recipe is 35 minutes, with a prep time of 15 minutes and a baking time of 10-13 minutes. The decorating time is an additional 10 minutes.
