The Wildbirch Hotel: A New Gem in Downtown Anchorage

The Wildbirch Hotel, a new "lifestyle boutique property" in Downtown Anchorage, officially opened its doors on June 18, 2025. Affiliated with JdV by Hyatt, this hotel boasts 250 rooms, a restaurant, bar, and brewery, making it the largest hotel to open in the area in more than twenty years.

At the heart of the hotel is Crimson, the signature restaurant. Open daily for breakfast, lunch, and dinner, Crimson offers a creative menu with high-end twists on Alaska staples, infused with a Pan-American Latin flair, under the guidance of Executive Chef La Mont Caldwell. Outdoor dining is available on Crimson's terrace seasonally, and private dining rooms can accommodate small groups up to sixteen people.

In the lobby, Canteen Coffee Co. offers a unique selection of provisions and souvenirs from local artisans. From espresso and coffee to fresh juices and grab-and-go food options, Canteen Coffee Co. caters to the needs of both hotel guests and the general public. Its streetside walk-up window provides easy access for passersby.

Gary McCutcheon, the hotel's director of food and beverage, is confident about Crimson's impact on Anchorage's dining scene. Haje Thurau, the general manager of The Wildbirch Hotel, shares this optimism.
