In a delightful twist on the classic French madeleine, we present a seashell-shaped version that is perfect for your summer gatherings. This recipe, developed by the bakery "Dolce Liebling," is a sweet and simple treat that you can easily make at home.

Preparing the Madeleines

To start, gather your basic pantry ingredients: butter, sugar, eggs, vanilla, flour, salt, and a bit of lemon zest and juice for added flavour. The mixture comes together within minutes, yielding perfectly buttery, lemony sponge cakes in just 15 minutes of prep time.

Bake the madeleines for 9-12 minutes until their signature bump appears on top and edges are golden brown. They should spring back when poked. After baking, allow the madeleine mold to cool before brushing on a new layer of butter and sprinkling on flour.

Creating the White Chocolate Ganache

To make white chocolate ganache, combine white chocolate and heavy cream in a small microwave-safe bowl and heat in increments until melted. Refrigerate until thick enough to pipe.

Decorating the Madeleines

For decorating, you'll need a seashell madeleine mold, candy melts, and milk chocolate. Melt the candy melts and spread into the cavities. Gently add the baked madeleines atop melted candy melts, and freeze for 10 minutes. Then, invert and tap the tray hard onto a wire rack or work surface until the madeleines pop out.

Melt the milk chocolate and use it for eyes and smiles on the decorations. Use red candy melts and a toothpick to draw on blush. Pipe white chocolate ganache on the bottom side of one madeleine and place a matching madeleine on top. Finish by adding pearl sprinkles atop the ganache.

Storing and Serving the Madeleines

Store madeleines in an airtight container at room temperature for up to three days. The resulting crumb of the madeleines is beautifully light and pairs perfectly with a cup of tea or coffee.
