Mixed Granola featuring Bananas, Walnuts, and Cranberries
Granola, a popular breakfast favourite and a staple in many households, has a rich history dating back to 1863. Originally called "Granula" by American health advocate James Caleb Jackson, the name Granola was popularised later by Harvey Kellogg in 1878. Today, we're sharing a simple and delicious homemade granola recipe that's naturally sweetened with banana and optional stevia.
Ingredients:
- 4 cups of rolled oats
- 1 cup of walnut pieces
- 3 tablespoons of ground flaxseed
- 2 teaspoons of cinnamon
- 1/2 teaspoon of ground cloves
- 1 1/2 cups of mashed banana
- 2 teaspoons of vanilla extract
- 1/4 cup of coconut oil
- 3 packets of stevia (optional)
- 1 cup of dried cranberries
Instructions:
- Preheat your oven to 350F.
- In a large bowl, mix together the oats, walnuts, flaxseed, cinnamon, cloves, and stevia (if using).
- In a small saucepan, melt the coconut oil. Add the mashed banana and vanilla, and stir over low heat for about 2 minutes.
- Pour the wet mixture over the dry ingredients and stir to combine. Additional stevia and/or cinnamon can be added for sweetening, if desired.
- Pour the oat mixture onto a large baking sheet lined with parchment paper.
- Bake for 30 minutes, after which the granola should be flipped and broken into smaller clusters. Bake for an additional 20 minutes.
- Allow the granola to cool, then stir in the dried cranberries.
Enjoyment and Storage:
This homemade granola can be enjoyed in fruit parfaits, homemade trail mix, or eaten on its own. For best results, store it in air-tight containers for up to 4 weeks. Enjoy your delicious and nutritious homemade granola!
