Refreshing Mojito Ice Pops That Match and Even Surpass the Popularity of Frose

Enjoy the refreshing taste of a Mint Mojito with these easy-to-make ice pops! This recipe makes 6 ice pops, each containing 1-2 mint leaves. If you don't have ice pop molds, an ice cube tray can be used instead.
Here's what you'll need:
- 2 cups water
- 1/2 cup coconut sugar
- 15-20 mint leaves
- Juice from 2 limes
- 1/4 cup rum (light or dark)
To make the mixture, boil 2 cups of water with 1/2 cup of coconut sugar, then remove from heat and add the mint leaves. Allow the mixture to steep for 20-30 minutes until it cools. Once cooled, add the lime juice and rum, stir well, and fill the molds with the liquid. Add 1-2 mint leaves to the top of each mold, seal, and freeze for at least 3 hours, preferably overnight.
These Mint Mojito Ice Pops can be enjoyed as a refreshing ice pop or added to a cocktail to create a floater and an ice cube in one. Enjoy however you prefer!
