Slow-cooked Lemon Dumpling Soup
Welcome to another delicious recipe from NorthernHomestead! Today, we're sharing a twist on a traditional Russian dish called Pelmeni, with our very own Lazy Pelmeni Soup. This easy-to-make soup is not only comforting but also incredibly yummy.
Ingredients
- 1 pound of ground meat (beef, turkey, or pork)
- 1 finely chopped onion
- Salt and pepper, to taste
- 2 quarts of water
- 1 bayleaf
- 1 chopped onion, 1 carrot, and 1 celery stick
- 1/2 pound of extra broad egg noodles
- Salt (optional chicken broth)
Preparing the Meatballs
Start by mixing the ground meat, the finely chopped onion, and seasoning with salt and pepper. Form the mixture into small meatballs.
Cooking the Soup
In a large pot, combine the water, chopped onion, carrot, celery, bayleaf, and salt (or optional chicken broth). Bring the mixture to a boil. Once boiling, add the meatballs and let them cook for about 10 minutes.
Adding the Noodles
After the meatballs have cooked for a while, add the egg noodles to the pot. Cook for another 8 minutes, or until the noodles are done. Don't forget to remove the carrots, celery, and bayleaf before serving!
Serving Suggestions
Our Lazy Pelmeni Soup is best served with a dollop of sour cream or a squeeze of ketchup. Feel free to adjust the seasoning to your taste.
